FRESH EGGS

The remark of Mr Dan Leiio to the effect that the new-laid egg js extinct has doubtless been thoroughly appreciated by the majority of us. Sir W. T. Gairdner has been telling: us that if eggs are greased at ouce when they are laid, and before they have time to cool (this last point js of importance), they will keep "fresh" for months. This result can be scientifically explained on the ground that the pores of the. shell are at once closed by the grease before the eg^ can be invaded by microbes or otherwise affected.
