First Sale of Cheese.

TiiEPukekohe and Mauku Cheeseand Bacon Factory has closed its operations- for the season. During the two months that have elapsed since the factory started, an average of 500 gallons of milk per day has been received, and the Company have now 1,300' twenty-pound cheeses in store. The first" portion of this stock will be submitted to auction in Mr R. Arthur's mart to-morrow (Friday), and it may safely be affirmed' that better cheese has never been offered in the Auckland District (its age being taken into account). The cheese is "rich in. quality and flavour, and for those who like' new cheese it is already in good marketable condition. As an entirely new article on the markot, it may bo hoped that the trade will make themselves acquainted with • the quality of the sample, which the manager, Mr H. Walpole, and the directors submit with great confidence for the decision of judges ofi choose. The closing of the factory till spring is due to the diminished milk supply, butter being for the time found more profitable than cheese., Mr Walpole will continue to watch over the cbeeso stored in the curing room. Before tho close of next season a separator' will probably have been added to the appliances ef the factory, and then, as originally intended, tho Company will be in a position to place on the market butter of a superior and equal quality. The settlers aro looking forward to the results of the first sale of cheese with very great interest, and we most heartily hope their expectations will not be disappointed. The enterprise has been carried out with great spirit, and it is of almost as much importance to Auckland as to tho country that these expedients to make dairy farming remunerative should meet with'success. Tlie efforts of this Company have certainly deserved it. " . ;
