INSTITUTE WORK APPRECIATED. (Special to the “ Guardian.”) CHRIST CHUR CH, This Day:; Appreciation of the work of the ' Wheat Research Institute, which- lias now been in existence for 10 years, is expressed almost unanimously' by millers in reports which were solicited by Mr W. Dench (manager of the flour .sec- ' tion of., the Wheat Committee) and; 4 , which 'Have been supplied to the insti- { tuts. . ... .-** f '• In a report to the committee of the r . institute yesterday Mr Dench said that an analysis was made of the baking quality of the first .150 wheats .received. It appeared that the general, quality of Jumbucki was as good .was last year, while that of Tuscaii; was lower, and of Cross 7 considerably lower. However, Cross 7 was still’bet-'' ter than Tuscan, and the fact that there was double as much of it this year as last (64,000 acres, compared with 34,000 acres) would probably secure that the standard of this-season's flour would maintain the high level set last year. A later analysis of 350 lines confirmed and strengthened this conclusion. -7- • 7 1;;; y

A set of the commercial flours fhat would bo produced when all the new season’s wheats comprised the grists was in process of collection. These would he baked, and -bakers apprised of any modifications of. technique- advisable to get the best, results „ from, the new season’s flours. . ■ r
