MUSHROOMS IN SEASON. <•> With plenty of mushrooms hero again wo arc thinking of the many and varied wavspn which this delicious food may be served. A few of the ideas following may save you a lot of time. Mushroom Pie. -Jib ox kidney. lib mushrooms. 1 large onion. 1 cup milk. 1 tablespoon butter. Short crust. Reel and wash the mushrooms. Prepare the short crust and leave in a cool place. Mince the kidney and onion. Place a- layer of mushrooms on the bottom of, a casserole, then some kidney and onion, and pepper and salt. Repeat until the casserole is as full as required. Pour over the milk and place dabs of butter on top. Cover with the short crust, which lias been rolled out fairly thinly. ' Bake two hours. For those of you who are fond of ‘au gratin’ dishes the following is certain to appeal to you. 1 Jibs mushrooms. . / 1 cup white sauce (medium). .1 tablespoon onion (chopped and fried). J teaspoon chopped mint. Salt. Pepper. Mustard. 4oz. grated cheese. Toasted breadcrumbs.
Prepare and fry the mushrooms, and place in a dish or casserole. Sprinkle over the finely chopped mint and onion. Prepare the white sauce and season with salt, pepper and mustard. Cover with cheese and breadcrumbs. Bake in a hot oven until the cheese is toasted Serve hot. Chop mushrooms small and mix in a thick white sauce for sandwich and patty fillings. L * When mushrooms have been fried and then mixed with a few bits of bacon in a thick white sauce, poured over hot shortcakes or rolls, they make quite a substantial and delicious luncheon dish. Try it. Savoury Mushroom Casserole. 1 Jib mushrooms. lib tomatoes. Rashers of bacon. Crustless slices of bread and butter. Salt and pepper. Line a well greased casserole with the slices of bread and • butter, then place on bottom a layer of prepared mushrooms. Season well. Place on another layer of bread and butter, then a layer of tomatoes. Repeat till all are used. Place the rashers of bacon on top and bake in a hot- oven about 45 minutes. Turn out on to plate and serve hot with tomato sauce.
