CHILLED BEEF

The chilled beef brought by .the Port Fairy from New Zealand arrived in moderate condition. Some quarters were good, hut many weie affected with black mould, necessitating considerable trimming before they were saleable. Australian and Argentine experts wore greatly interested in the consignment. They expressed the opinion that the quality was admirable, but lack of experience was apparently responsible for the faulty condition, despite the fact that less time was occupied in transit than ivas occupied in the case of the Port Fairy’s shipment from Sydney, which was satisfactory, and from which experts deduce that handling at the source, and not. time, is a vital factor. The South African shipment of chilled beef arrived simultaneously. The quality was moderate, but it carried well.
