MEAT BY-PRODUCTS.
THE EXPORT TRADE. FREEZING COMPANY'S VIEW. (Special to the "Guardian.") CHRISTCHURCH, This Day. Freezing companies in New Zealand are constantly keeping watch on possible markets for their by-products, according to the manager or one of the l(iggest refrigerating companies in Christchurch. He assured a reporter yesterday, however, that profitable trading in them is by no means so simple as speakers at the annual meeting of the Canterbury Sheepowners' Union seemed to think. "Our sheep and lamb kidneys, and sweetbreads have been exported to the London market for many years and have commanded good prices," he vsaid. "Another by-product of the sheep which has beeen exported in small quantities with satisfactory results is the.pancreas gland. The demand for this particular frozen product is somewhat limited. Experiments have been conducted in the shipment of hearts and livers, but so far the results have not been satisfactory. These experiments, however, are still being continued. "As to the by-products from cattle, the kidneys, sweetbreads, cheeks, skirts, and' livers have beeni exported to the London market for many years. In America certain other by-products of cattle and sheen are saved. It must be borne in mind, however, that the quantities available in America are infinitely larger than in. this country, and operating costs considerably lower. It is therefore possible to save certain by-products in sufficiently large quantities and at a cost which puts the shipment of them on a commercial basis. The fact that in America the killings of cattle and sheep are concentrated in a much smaller number of plants also tends to make the saving of these by-products a more economic proposition." _^___
