AMERICAN'S COMMENTS Major Dudley Smith, of the United States Purchasing Board, judged exhibits at the Gisborne Refrigerating Company's Kaiti winter bacon competition with a view to awarding a cup on behalf of the Purchasing Board for the carcase best suited to their requirements. Major Smith said that the main thing which impressed him was the great improvement m the type of pig which had been bred in the district. He was very interested to see photographs of carcases exhibited from 1935 onwards, and said the advance made since then was something to be proud of. Major Smith said that the main interest of the purchasing board was to stimulate production and also the quality of production. in the United States a slightly heavier animal v.ns desired, the Americans using only the belly portion for bacon, whereas we used the whole Wiltshire side. To secure the desired result. United States hog-raisers made a practice of feeding a little longer in order to secure a little more fat.
