CREAM DRESSING The following dressing will keep for any length of time in an airtight bottle. Ingredients: 1 dessertspoonful of flour, loz butter, $ pint milk, £ teaspoonful salt, a good sprinkling of pepper, 3 tablespoonfuls of vinegar, a sprinkling of cayenne it a hot dressing is liked. Melt the butter in a saucepan and stir in the flour gradually as you would when making sauce. Then add by degrees \ pint of warm milk—stir constantly to keep the mixture very smooth. Let it boil gently for three minutes. Put the salt and pepper in a basin, and pour in the sauce. Stir well and continue while you add the vinegar a little at a time, and last of all a teaspoonful of castor sugar. Leave until cold, then store in a bottle, well corked or better still, one with a screw top
