PRESERVING MINT

KEEP ITS VIVID GREEN Mint is very plentiful now and stores should be laid in for next winter. Many women find that their stored mint becomes very brown. Try doing it this way and it will be as vividly green as desired when you come to use it later on. If you can collect it yourself so much the better. Mint for storing is best collected after rain when the sun is just beginning to dry it off. Tie it up in bundles and hang either in a sunny window or near a mildly warm stove. Not near intense artificial heat. When brittle take the bundles and strip down each stem by hand on to a cloth or paper. Have some firm screw top jars handy. Pour the mint into this. Screw down firmly, label and keep until required. Will be excellent for mint sauce and other flavouring when necessary. 1
