RABBIT EN CASSEROLE One jointed rabbit, bunch fresh garden herbs (parsley, mint, thyme), 1 bay leaf and 4 cloves. 1 turnip, onion, carrot, .pepper and salt, lib mashed potatoes. 2oz dripping, loz pearl barley, 4 rolled rashers bacon, I pint stock or water. Clean and joint the rabbit. Fry lightly in dripping. Peel and slice the vegetables and also fry. Tut together into a casserole with the rolls of streaky bacon, herbs, cloves, seasoning and Larlev. Pour in the stock and lightly dredge with flour. C ver and put into the oven for 2£ hours. Beat cooked potatoes until creamy, sprinkle with herbs, pipe thickly over the meat. Return to the oven until lightly browned.
