WAYS WITH ONIONS

Unions Stuffed With Kidneys.— Two large onions, two kidneys, a cupful cold water, pepper and salt. Peel onions and scald them in boiling salted water, then take out enough of the centres to allow kidneys to be placed inside. Put onion together as if whole and tie it round with string to keep in position. Place onions in a casserole and pour the water over them, adding the centres of onions previously finely chopped, seasoned with pepper and salt, and place in the oven, which has been allowed to get moderately warm. Cook in moderate oven about 2| hours, and when about to be served thicken the gravy in usual manner, place onions on dish and pour gravy over. A more substantial meal is made by the addition of mashed potatoes. Boiled Onions. —Choose onions as learly one size as possible. Peel them, but do not allow them to stand n water after peeling. Blanch and put them on to boil in fresh water. Cook, with the lid on the pan, for r°m two to three hours, according o the size. Very large onions may ake even longer to cook. Drain •veil, in a warm place. Serve coated vith a thick white sauce. This makes i good supper dish for a cold night. Creamed Onions on Toast. —Slice ne or two onions, and fry them in n ounce or more of buttv, about a irl of milk, and a seasoning of salt low thicken the sauce with a desertspoonful of flour, loz grated heese, and a quarter teaspoonful of nade mustard. Serve on toast with little chopped parsley sprinkled ver.
