APPLE CARAMEL CAKE Well grease a square cake tin, spread with > small cup brown sugar and dot with pieces of butter, then cover this with two layers of thinly sliced apples. Sprinkle with 1 tablespoon brown sugar mixed with half a teaspoon of ground nutmeg and I teaspoon of cinnamon flavour'ng. Covci all over with the following mixture: Beat the yolks of eggs with 2 tablespoons of milk, add 1 cup white sugar and heat until thi’k, with 1 teaspoon of lemon flavouring. Sift in 1 cup flour. 1 cup wheatnieal, of salt mJ 2 teaspoons baking powder. Lastly fold in the whites of two eegs stiffly beaten. Mix all well together and spread over the apples in the ca’-c tin. Bake 1 hour in a medium oven. Be careful when turning out not to spoil the caramel. It can be eaten cold as a cake or hot as a dessert with custard.
