The feathers’ almost' falPbut if the operation is properly done. Suspend the bird by a cord; lay the head in the- palm of the left hand. The fingers should have a firm hold on the bony part of the skull. Pressure on the hinge of the jaw at each side will keep the mouth open. A sharp knife with a small blade should be used. Insert the blade into the mouth on the right side as the chicken hangs and pass it well into the throat. Make a small (and quite ’gentle, if the knife is really sharp) diagonal cut from the left ear. 'This cuts the jugular vein. The brain is pierced by pushing the point of the knife up the cleft in the roof of the mouth until it strikes the brain. 'Give half a turn and withdraw the blade. The bird will give one squawk and will then lose all feeling. Unless there is a squawk the “stick” has failed and plucking will be difficult. Plucking must be immediate.
