DOES NOT DIET.
FAMOUS ACTRESS, EPICURE. “EATS WITH THE MIND.” Delysia does not diet, says an Australian writer, in • referring to Alice Delysia, the famous French actress, who is appearing in “Mother of Pearl” in Sydney. She relies on perfect health to keep her figure, and ■she enjoys eating, which she says is done with the mind, just as talking, singing, acting or loving. After her rehearsai on Friday night a large pot of Irish slew, made to her own directions .awaited her in her suite at the Australia.
“If I cannot eat I am not happy,” says Delysia, ‘ who personally supervises Hie menu when she gives a party, and tastes eacli course and the wines before she gives permission for the meal to be served. She is an epicure, with a practical knowledge of cooking as extensive as her stagecraft. The first person she asks to see at a liotel is the chef. At a supper party a champagne cocktail, caviare, and a salmon hors d’oeuvre, witli preserved mushrooms and sardines, preceded the serving of four enormous pigeon pies garnished with bacon. The menu for dinner commenced with caviare, prepared by Delysia, who displayed considerable skill in cutting the hard-boiled whites of eggs into artistic shapes to hold it. A lisli dish followed. A huge basin was lined with pastry and filled with delicious creamed fish, with trimmings of "sea-fruit,” such as prawns and oysters.
Nothing Better. There is nothing better than Australian lamb, according to the star, so the next course was a lamb served a la sucking pig, with green peas, potatoes and mint, sauce. " Mon Desire," a delicious frozen pudding, surrounded by a water ice, completed the meal. “ But,,” said Delysia, “you should see what Antoinette can do—l will show you some day.” Antoinette is Madame’s maid, who miraculously produced three perfectly cooked chickens for Hie party on the train coming from Melbourne.
