The Food Investigation Board’s report, discussing the possibility of shipping chilled pork from Australia and New; Zealand, mentions an experiment of a carcase being stored in carbon dioxide slightly above freezing point for seventeen weeks and then sent to Smithfield- Twenty experts tasted the pork and said it was the most tender they had ever eaten, resembling chicken and veal.
