RECIPE.
NORABELLES. Take 4oz. of flour, 2oz. of ground rice, -ioz. of fresh butter, 1 teaspoon of baking powder, -ioz of castor sugar, 3 eggs, 2oz of dessicated coconut, ioz of apricot jam, and 4oz of Icing sugar. Sift together the flour, ground rice, castor sugar and baking powder, cream the butter, and beat the yolks of the three eggs and the whiles of two, until they are light and frothy. Add by degrees the beaten egg to the creamed butter, then gradually the dry ingredients. Mix and heat well. Grease some fluted patty pans, half fill them with the mixture, and hake in a quick oven for ten minutes. Hub Hie icing sugar through a line sieve, form it into a paste with the whipped white of one egg. 'When Hie rakes are cold slice a piece off Hie lop of each, scoop a little out of the centre, till it, with a mixture of the apricot jam and coconut, replace the slice of each rake, and ice I lie l ops with the- icing sugar mixture, sprinkle with rnconul, and allow to dry In a warm place.
