Vegetable Soup. —Milk can be used with many vegetables and, left-overs to make nourishing soup. For example, peas, beans, potatoes, celery, spinach, carrots, asparagus, onions and tomatoes. Make in the same way as splitpea soup. Simple White Sauce. —loz butter, 3 pint milk; salt, pepper and lemon juice to season. Melt the butter in a small saucepan, add the flour, and work together with a wooden spoon, gradually adding milk and stirring all the time. Bring to the boil, and cook gently for five minutes ; season with salt and pepper, and a squeeze of lemon juice. This is the foundation for a great many sauces. ' For Dutch sauce, add 1 egg, a tablespoon of lemon juice, or white vinegar. For mustard sauce, a large teaspoon of made French or English mustard stirred in just before serving. For parsley sauce, add chopped parsley to white sauce. For caper sauce add 1 tablespoon chopped capers and a little lienor from the bottle.
