BERRY SNOW CREAM.

This may be made with any ripe ' berries, such as loganberries, red or black currants, mulberries, or elderberries. Put a pint of the stalked washed fruit into a pan with 4oz of caster sugar and the juice of a lemon. Simmer until the fruit is soft, then put it into a gla§s dish. When cold, pile over a meringue made with the stiffly-whipped whites of two eggs mixed with a gill of whipped cream, a little sugar, and vanilla essence.
