BACON MEAT LOAF. Bacon is too often dismissed as just a breakfast dish—especially important on Sunday mornings. But bacon has many uses, not the least of which is as a flavouring,. This recipe, for a bacon meat loaf, is well worth trying. Take Jib bacon, Alb lean veal, lib lean beef, 1 green pepper, 2 eggs, 1 cup milk, and 1 cup breadcrumbs. Put the meat and bacon through the mincing machine, and mix with the other ingredients. Line a bakingdish or casserole with strips of bacon and fill with the meat mixture. Lay strips of bacon over the top. Bake in a moderate oven for 45 minutes. Turn upside down on to a large dish and garnish with parsley and sliced tomatoes. The above ingredients make sulllcient for six people.
