RECIPE.

Mushrooms Au Qratin. Trim 12 large mushrooms by peeling them and removing the stalks. Spread each one with a mixture made as follows: —Mix 4 chopped mushrooms, loz minced ham, 2 chopped eschalots, a teaspoonful of chopped parsley and a pinch of herbs, together. Add salt and pepper to taste. Set this to heal in a stew pan for live minutes. Add loz butter, and 1 beaten volk of egg. Place the mushrooms, ‘spread with the mixture, in a covered dish. Sprinkle with breadcrumbs and bake for a quarter of an hour. Serve with brown sauce.
