RECIPE

Shoulder of Lamb en Casserole.— Bone a shoulder of iamb, roil it and lie with string. Brown all over in a little fat in a frying pan. Cut 21b of peeled potatoes and four large onions into thin slices. Put these in layers in a casserole, sprinkling salt and pepper over each layer; add a .gill of water, and place the shoulder on the top. Cover with greased paper, put the lid on the casserole, and bake in a moderate oven from l{ to 1J hours. Remove the string from the lamb and return it to the casserole, in which if is served
