CHEESE PUDDING
Required: soz of grated cheese, salt, pepper, 1 egg, tablespoon of mushroom ketchup or tomato sauce, 6oz breadcrumbs, 1 teaspoon baking powder, Jib flour, 1 onion, i pint of milk. Peel and grate the onion. Mix the flour, baking powder, breadcrumbs, cheese and onion together. Season, beat up the eggs with the milk, and add it with the sauce or ketchup to the dry ingredients. Put it into a greased basin, cover with a greased paper, and steam for two hours. Turn out and serve with melted butter sauce. This should ( bc sufficient for four or five persons.
Butter a pint souffle tin or basin, lie a buttered band of paper round, so that it stands up a few inches above the top; place the mixture in the tin, with a piece of buttered paper resting lightly on the paper band. Steam for about* 30 minutes.
