WHEN USING LEMONS.
The housewife frequently has occasion to use a few drops of lemon juice while she is oooking, and usually a lemon is out in two for the purpose", the juice squeezed out, and the' cut fruit set on one side. As a rule, the pieces of lemon dry I up and Anally have to be thrown away l as useless. There is no need for such waste, however, if the following economical method of extracting the required amount of juice is adopted. Simply puncture the skin of the lemon with a fork; then carefully squeeze out the desired quantity of juice. After this is done, put the fruit in the cupboard, when it will remain perfectly fresh for a long while. If a lemon is placed in a moderate oven for live minutes before using, it is possible to obtain twice the quantity of juice that it would otherwise yield. This is a great advantage when making lemonade.
