The housewife frequently has occasion to use a few drops of lemon juice while she is oooking, and usually a lemon is out in two for the purpose", the juice squeezed out, and the' cut fruit set on one side. There is no need for such waste, however, if the following economical method of extracting the required amount of juice is adopted. Simply puncture the skin of the lemon with a fork; then carefully squeeze out the desired quantity of juice. After this is done, put the fruit in the cupboard, when it will remain perfectly fresh for a long while. If a lemon is placed in a moderate oven for live minutes before using, it is possible to obtain twice the quantity of juice that it would otherwise yield. This is a great advantage when making lemonade.
