THE RENNET SUPPLY
PEPSIN AS A SUBSTITUTE.
Mr \V. Coodfellow, managing direci)i- of the Waikato Co-operative Dairy ('., Ltd., lias received the following letter from Messrs 1?. and \V. Davidson. Ltd., of Glasgow :
"With reference to the matter of pepsin being a substitute for rennet, our friends in .Montreal have received further communication from .Mr .1. A. Uuddick. reading as iollows: i beg to say that so far as we can see the r'ifi'event forms of pepsin which have l>een submitted for test will give very fair results. We do not think the cheese is quite as fine in texture as that made from rennet, but the difference is not excessive, and we think the result will be fairly satisfactory. We will make a public announcement of the matter in a dav or two. 1 think the shortage has been much exaggerated, and there is no necessity, as far as T can learn, of any factory closing down. You may be assured that this department is doing everything possible in regard to the matter.' From the above it would appear to us that there has been a great shortage of rennet in Canada, and that special efforts have, been made to provide a substitute, which apparently has been found in pepsin. The public announcement will lie forwarded to us in due course, and we will see that you get a copy of same."
