SAMUEL COCHRANE & SON, Auctioneers. A LL persons found TRESPASSING I\. with dog or gnu on Green Hill Farm after this date will be PROSECUTED. WM. TAYLOR. Te Awamutu, June Bth, 1892. " |_J O\V do you pronounce S-h-a-k-JIL i.-A->"-D's B-A-K-I-N-O P-O-W-D-e-r r' " queried one housewife «f another. ' Sharland's Baking Powder,' promptly replied the other. ' How else uould you pronounce it ?' 'I pronounce it ' most e-tcelhnt," wan the witty rejoinder.

Speaking of baking powders, a scientific exchange explains that ' tho various baking powders of commerce are employed to produce an artificial evolution of carbon dioxide, to support that produced m the dough by the action of the yeast. The composition of baking powders varies considerably, it appears to be mobt convenient to produce the carbonic acid by the action of hydrochloric acid on sodium bicabonate since iu this way salt, which is in any ease necessary, is also formed. Another widely-u.-ea material is aluminium carbonate. It has beon hitherto assumed that this substance after aiding 1 in making the dough rise was volatilised by the heat of the oven. Dr. lindeinann has, however, found that the ammonia is by no means all removed, but remains more or less completely united with the gluten. This result was commuuicatcd to the Association of Chemists assembled at Washington in August, 181)1, and although the presence of ammonia is not a source of danger for the consumer nearly all tho chemists preseut agreed in discouraging the usb of ammonium carbonate in It is a true paying that ' what the eyo does not see the heart does not grieve over,' but at Ibe same time it is quite as well that wo should carefully avoid any articles used iu the preparation of food which are not healthful. Looking at the enormous trade now done in baking powder, users should be careful to select a good brand and keep to it. for it is on record that in the United States particn* larly alum and other chemicals not at all suited to improve the delicato organs of digestion arc f.-eely used. Whoso aro good baking powders ? In settling thin question, we must not be too much guided by puffy testimonials couched in very glowing terms, nor—although it is necessary now-a-davs, in order to make any good preparation known, to advertise freely until such time as all possible conBurners are practically acquainted with its value—rely too much on newspaper advertisements. Nowhere, perhaps, more so than in tho Slates is the baking powder advertising war raging fiercer. For instance, and to show the extent to which this rivalry exists, we note a reference to tho subject in a recent number of tho Oil, Pain/, and Drug Jleporlrr. The. Reporter merrily notes that in one paper the purest baking powder in the world is made in Chicago, and the vilest of all atnmoniacal poisons is dispensed in New York : while in another organ, evidently subsidised by an opposition company, tho verdict is reversed in a very decided manner. Do not, thorefore, be altogether led away bv fla-hy advertisements, hut- lest for i/oiii-Ktrrx. " ' Indigestion d"th make Wutes ot us all,' and many a deed, afterwards bitterly repented, has been eon - mitted when the mind was upset by food made with faulty, not to say injurious, material-. • How 60 you pronounce iS-11-A-u----l-a-n-u's B-a-k-i-n <; P-n-w-n-K-u • I pronounce it most excellent. It is a perfect preparation, healthful, aud mo-t satisfactory to use.' _
