Put the mixture in a 6in. cake tin with white paper and bake in a moderate oven for about 4 0 minutes. • The following cakes may be made from this mixture by using the variations indicated: — Cherry Cake: The grated rind of half a lemon, and 2oz chopped crystallised cherries. Seed Cake: 2 level teaspoons caraway seeds and a small piece of shredded citron peel. Light Fruit Cake: 4oz raisins, I sultanas, dates or figs. Coconut Cake: 2oz desiccated j coconut and some essence of lemon. Orange Cake: The grated rind of an crange and 3 tablespoons of orange juice.
