EXTRACT OF MEAT (by Liebig's process) prepared by Mr R. Tooth, of New South Wales, for the immediate production of Beef Tea, Soups and Gravies. This extract contains, in a concentrated form, the most; valuable properties of meat ; it is divested of evory traco of fat, the presence of which would causo it to become rancid j and gelatine, which would dest roy its keeping properties, by rendering it liable to turn mouldy in a high temperature or moist atmosphere. The advantages of this discovery aro so immenso, that it is difficult to overrato them. To the invalid there is a boon afforded, by supplying a food which at once conveyß nourishment without the loss of strength attendant on tho digestion of ordinary animal food. To parties on tho diggings, or in remote districts where fresh mout is so difficult to obtain, the extract will be found to convey a treat benefit ,• a small salt spoonful dissolved in a breakfast cupful of hot water, with bread or vegetables and a little seasoning added, will supply in a moment a basin of nutritious soup.
