EXTRACT OF MEAT (by Liobig'a process) prepared by Mr R. Tooth, of New South Wales, for the immediate production of Beef Toa, Soups and Gravies. This extract contains, in a concentrated form, the most valuable properties of meat ; it is divested of every trace of fat, the presence of which would cause it to become rancid ; and gelatine, which would destroy its keeping properties, by rendering it liable to turn mouldy in a high temperature or moist atmosphere. The advantages of this discovery are so immense, that it is difficult j to overrate them. To tho invalid there is a boon j afforded, by supplying a food which at once conveys nourishment without the loss of strength attendant on tho digestion of ordinnry animal food. To parties on the diggings, or in remote districts where fresh meat is so difficult to obtain, the extract will be found to convey a treat benefit ; a smull salt spoonful dissolved in n breakfast cupful of hot water, with bread or vegetables and n little seasoning added, will supply in a moment a basin of nutritious soup.
