The clpths on >;'-'; the surface are often displaced, and the $1 butter, instead of being level on tho top and ;,^ I firm, is frequently bulged, soft, and mottled, i-i t The trade on this side consider this it due :i. to the butter becoming heated, and ac they jfe know it does not become so after its arrival *;f ; We, and they are satisfied that the cool ;■ ■ chambers in the direot steamers are perIf-; ficfly satisfactory, they conclude that the |.;harm v done after the butter is packed, before it reaches the direct "ft'eteamer, either while in course of ,', tr&tumiseion to the coast or in course of < transhipment by coasting vessel to the port ■^ of shiptment. In consideration of this we £*■ -would urge on manufactures the desirability .^. of . seeing that their butter reaches the ;f ; cool chamber of the direct steamer in good ■ji order. For this purpose our brokers urge that manufacturers themselves should have stores, and combine to put pressure on j;", -the owners of coasting vessels to provide B) cool chambers."
