Preserved Milk.—A new method of preserving milk has been introduced by the Anglo-Swisa Company, whose factory is situated on the Lake of 2ug. The process adopted is simply the abstraction of the watery particles from the milk and the addition of beetroot sugar. Milk thus prepared remains good for months after the tins in which it is packed have been opened, becoming neither sour, mouldy, nor rancid. It bears the ordinary changes <6f temperature without injury. It is sold in tins, each containing the equivalent of rather more than half a gallon of good milk, of abont the quality of the best country milk. The price of the tin is Is 3d. The cost of the tin being a penny, and the duty being a penny, the price of the condensed milk when diluted for use with five parts of water ia 6d a quart. About onethird of a ponnd of beet-root sugar is introduced into each tin. The use of this preserved milk is increasing in England.
