FAVOURITE RECIPES
BREAKFAST MUFFINS. To 2 eggs, well beaten, add 1 cup milk, 2 cups flour,, 2 teaspoons baking powder, salt. Beat well and add 2 tablespoons melted butter. Pour muffin tins about half full and bake in a moderate oven. (These are especially good with a fluffy omelet and strawberry jam). CINNAMON COFFEE CAKE. Sift together 2 cups flour, 2 teaspoons baking powder, salt, 1 teaspoon cinna-. mon, 1- cup sugar. Mix in well 1 large tablespoon butter. Add enough *milk to make a soft dough. Smooth out in a baking pan, reserving that which sticks to the sides and bottom of the mixing bowl. To this add 4 cup sugar, 4 teaspoon cinnamon. Mix until crumblev, adding more sugar, if necessary. Sprinkle this on top of the cake. Broken nut-meats sprinkled over the top makes this a little extra-special, oi raisins may be mixed into the d.ougli.. OH, SO GOOD CAKE. The following recipe, some _ call “Depression Cake,” but as we didn’t like the name “Depression,” we call it “Oh, So Good.” It is made without eggs or milk, and very economical: Mix together 4 cup butter, 1 cup sugar, 14 cups water, 2 squares chocolate or 6 tablespoons cocoa, 4 teaspoon cinnamon, cup raisins. Stir over fire until it boils. Let cool and add 2 cups flour, 2 teaspoons baking powder, salt, vanilla. Bake in a shallow loaf pan in a moderate oven 350 deg. F. It needs no frosting.
