HASHED TRIPE.
Take about a pound of tripe aud cut in strips; place it in a saucepan with a breakfastcupful of milk or milk and water, add to it an ounce of butter with a dessertspoonful of flour worked into it. Season with pepper aud a little minced ouiou and salt, and simmer slowly for three-quarters of an hour. Servo garnished with chopped
parsley.
