WOOD'S HOUSEHOLD RENNET TABLETS FOR JUNKET.
Recipe.—Take one quart of rich, frosh milk, warm to about 80 degrees (lukewarm), then put in a quarter cup of sugar and grate in a little nutmeg. Or it may be flavoured with a teaspoonful of lemon or vanilla or any other flavouring extract. Then dissolve in a small wine-glass of cold water one of the " Junket Tables," and stir this into the milk quickly. Set in a warm place for half an hour until it is firm, then set it where it will cool, when it is ready for the table. Should be prepared about an hour before eating. Serve as you would custard or any other pudding. The result is a delicious, wholesome and easily prepared dish for dessert or the tea-table, and one that may be enjeyed with impunity by invalids and children.
These Household Rennet Tablets may also be taken medicinally for indigestion and dyspepsia.—H. T. Wood, Masterton.
