AUSTRALIAN WINES

The wines of Australia, especially those of Murray district, are fast coming into general use hero in Victoria. The" enterprise and skill of Mr Fallon, of Albury, aro the chief means by which this satisfactory result is being brought about. Every winter about this period (July) Mr Fallon begins to send down his wines to Melbourne ; but these are not the wines of the previous vintage, but are always .at least two yeais old. Thus, at the present time the wines he is sending to Melbourne arc those of the vintage of ] 866, and a very superior class of wines they are. Amougst his while wines, the reisling andverdeillio are exquisitoin flavor, body, and bouquet. They combine great alcoholic strength, with extraordinary delicacy aud fruitiness of taste ; and
with two or three years' additional a£[e, would compare best with the Madeira of by-gone times rather than any other European wine we know of. But the fact is, that (he wines of Australia have a distinct character by themselves, being generally lighter to the palate apparently, but in realitymuch more spirituous, than Rhenish or French wines. Fallon's fiuearob and tukay of IS6G are also very rich, pleasant wines. In reds, liis shiraz is really a superior wine, resembling a very fullbodied port, with the aananthic aether well developed. * The Burgundy is" lighter, but though rather sweet, is a fine sound wive. The carbenet is a rich claret, soft, velvety, and full. .
