(As used by Mrs. Ashford Harris, president of the Wellington Housewives Assn.) Place eight cups of sieved flour in large basin and make a hole in centre; into this hole pour 1 pint of lukewarm m’lk (use any sour milk cream available) in which has been melted 2 tablespoons of butter. Add 1 cake (1 oz) compressed yeast, melted in 1 cup of warm water with 1 teaspoon of sugar; make a .light batter with some of the flour, and leave in warm place 20 minutes. Add 1 dessertspoon salt and gradually work balance of flour into liauid at centre: turn out on well floured board and knead lightlv; return to greased bowl and cover with cloth; leave in warm Place till risen (about. 30 minutes). Turn out nnd k*»ead again, using verv little flour nn board. Form into loaves or rolls as renuired, and nlac*' in creased tins.
