FISH “EN CASSEROLE”
Line a fairly deep round casserole dish with previously cooked spaghetti or macaroni.’ Place in layers filleted sole, mushrooms and cream until dash is three-parts full. Dust each layer with celery, salt, and black pepper, and over top layer sprinkle lightly finely-chopped parsley. Half a sweet bay leaf may also be added. Slowly pour over contents sufficient milk, to which two teaspoonsful of mushroom ketchup have been added, to cover contents. Cover with lid and cook in moderate oven for 2h hours. If necessary, add more milk later to keep dish moist.
