DELICIOUS BEVERAGES
TO TEMPT THE INVALID. The following recipes are for wholesome and easi'y-niade beverages and can be recommended as suitable and acceptable when a cooling or hot drink is required in the sick-room. The prevalence of ’flu will make them all the more acceptable. A hot drink taken last thing at night is an excellent remedy for a cold or influenza. It not only induces sleep but causes the body to perspire, thus helping to reduce the temperature. The drinks given during the day to the patient should be cool and stimulating. Lemonade for Invalids. Beat the yolks of 2 eggs with 2 teaspoons of castor sugar, and the strained juice of 2 lemons. Add the stiffly whisked whites of the eggs, and 1 bottle of sodawater and serve. Treacle Posset. Boil 4 pint of milk, add 2 tablespoons of treacle and boil till the curd separates from the whey, strain and serve hot. Linseed Tea. Simmer 2ozs. of linseed, the thinly pared rind of 1 small lemon, 1 quart of water and loz. of liquorice together for 30 minutes, (.'over with a saucer and let the mixture infuse for 20 minutes. Strain and use hot as a remedy for cold, or allow to become cold, and use as a beverage to alleviate hoarseness or thirst. Egg-Nog. Beat the yolk of an egg till very light. Add enough sugar to sweeten, and 4 teacup of hot. milk; lastly stir in the white of egg beaten to a stiff froth. Strengthening Egg Mixture. Beat the white of an egg to a light froth. Alix 1 tablespoon of cream, 1 tablespoon of brandy, and I teaspoon of castor-sugar together; stir the white of egg in lightly and serve at once. Gruel. Mix 2 rounded teaspoons of the best fine oatmeal smoothly and thinly with a little cold milk. Then pour on 4 pint, of boiiTng milk, stirring it all the time. Return to the saucepan, and cook gently for 10 minutes, keeping well stirred. Strain and add salt or sugar to taste; serve, very hot. Note.—lf liked, a. tablespoon of brandy or sherry may be added after it has been strained; in that case, use . sugar, not. salt. Apple Water. Slice I large apples, put in a bowl, pour on 1 quart of boiling water, add sugar to taste, stand for 4 hours, st lain, ami add the juice of lemon, and serve. Strain, and add the lemon juice ami sweeten to taste. Thr two recipes just given arc excellent re medics for a cold.
