DOMINION BUTTER
GIFT HOME ACKNOWLEDGED VARIATION IN “SALT” AND “FRESH” A “Chronicle” reporter was afforded an opportunity of tasting whey butter and comparing it with the first grade product of a local factory. There is a very marked difference, and the taste is sufficient to convince anyone that a bad reputation would attach to the New Zealand product if whey butter was sold on the London market as the best this country could offer. Whey butter disposal has now been taken over by the Dairy Produce Control Board, and efforts arc directed to ensure that its sale outside this country is only permitted to those who will use it for cooking and not immediate consumption. A letter received by a Wanganui resident this week from a relative in the Old Country indicates that the Dominion’s butter is held in high regard. Opportunity was taken to send Home a gift of the product under the control board’s scheme. This is how the recipient acknowledged it:—• “The butter arrived safely and we aro now eating it. It is very nice indeed, and thank you very much for it. You can tell the general opinion of it from the fact that a decent grocer, being asked for ‘best butter’ always sells New Zealand. There is one minor point, however. It appears that butter is sold in England as ‘fresh’ or ‘salt,* and some people prefer one, some the other. They are both actually equally fresh, but one is more salt than the other. In New Zealand I think ‘fresh’ is unknown. In any case you can be assured they could get no better butter in England.”
