ANCIENT SOUP KITCHEN
OLD CUSTOMS The art or soup-making is one of the eldest forms of cookery of which there is any knowledge whatever. It denoted a distinct step forward of the civilisation of the world when man learned that game, which he ttapped or killed might be propaiod by a process of “stone boiling.* ’ affording film a broth and a meat in place of the charred product which hitherto he had cooked over the hot embers. The. skin ot the anima! was his soup kettle, in which he placed the meat and covered it with water. Then the improvised stock pot wa.< hung in some convenient spot, and stones, heated in the fire, were placed in it, one after the other as they became cool, until finally, after hours of toil, the broth was ready for serving.
