Greytown Cheese Factory.
The working of butter and cheese factories is being watched with considerable interest throughout the colony. The success of these institutions in America led to the belief that in a country like New Zealand they should be stilt more successful. In the face of many difficulties and the prejudice which is always manifested against everything new, butter srd cheese factories have been established in the North and South Islands, and it is gratifying to find that in several cases the results so far have been good. The present drought, however, is beginning to tell upon the milk supplies, and it is probable that some of the factories will have to close much earlier for want of sufficient miik to carry on operations profitably. The present season’s work, however, has been satisfactory so far as the Greytown and Taratahi Factories are concerned. At a meeting of the directors of the Greytown Cheese Factory, held the other evening, thi statement concerning this season’s work war in every wjy gratnyiug and it was estimated that had the weather been more favorabli for pasture the Factory would have come out at the end of the season with a profit of abom £2OO. But owing to the drought and the milk supply failing, this anticipated result will not to realised. Still, as the manufac lure of cheese is so profitable, it would I, well for the directors to consider whether it would bring in a larger quantity if a ball penny more per gallon were offered to far mere. It would be a pity to see the factory closed earlier than usual if an increase in price wnuld bring in a larger quantity of milk. The cheese turned out this season has been of splendid quality and a ready sale has been found for a large portion at a good figure.
