Dairy Operations at the Exhibition.
One of the most interesting thing* to be seen at the Wellington Industrial Exhibition is the working of the De Laval cream separator. Last Saturday afternoon thirty gallons of milk were put through the separator in leas than half an hour. Some of the milk was submitted to a second test, and the small quantity of cream extracted showed how thoroughly the separator did its work in the first instance. The milk was heated to a temperature of 75 degrees, then poured into a vat, from which it flowed through a pipe into the separator, which revolved at tho rate of 6000 per minute, the principle being somewhat similar to that of an ordinary egg healer The machine is very simple in construction, and horse, steam, water, or gas power can be used to keep it in motion, one horse power being sufficient to drive it. It is claimed that a farmer making 2001b of butter per week can increase his yield to 2301b by using the separator, and that one machine will suffice for 100 cows. It is slated that in Sydney the “separator” butter, as it is termed, fetches 3d to Jd per lb more than the ordinary run made by die old system. Unfortunately these dairy processes at the Exhibition cannot be carried on properly or on a sufficiently large seals to test fairly the value of the machine employed, simply because the amount of milk supplied is altogether insufficient. The dairy farmers in the vicinity of Wellington do not care to supply sufficient milk for the purpose. Probably, these dairy farmers prefer to sell their milk. It is a pity that a proper supply of milk is not obtained, so as to show the working of the dairy machinery in a complete way during several hours each day. Mr Mannsell, of Rivers dale, has found considerable difficulty in getting the Wairarapa farmers to send anything like a sufficient quantity to tesi ihe value of the separator, though he has supplied liberally himself.
