FAT CONTENT OF CHEESE
"AVOID WRONG IMPRESSIONS." Fat content of cheese was a matter into which the most exhaustive inquiry should be made to prevent a wrong impression being created upon consumers. That was the statement of Mr A. C. Rowson, a Tooley Street merchant, at Hawera recently. The public regarded cheese as being manufactured from full-cream milk or skimmed milk. Cheese made from the latter would almost certainly be regarded as inferior, considered Mr Rowson. It might not l be easy to educate the public to think differently, and an unwarranted public prejudice might easily be created by mishandling such a very important matter of distinction. The miinimum fat content in Canada was much lower than in New Zealand, but that did not represent the proportion of fat usually to be found in Canadian chepse. Canadian cheese made from skimmed milk was not permitted to be shipped from Canada.
