TAINT IN MILK
It is reported that the cause of taint in milk, commonly known as oily milk, which renders large quantities unfit for use has been discovered by the staff at the National Institute for Research in Dairying, Reading. Mr S. R. Whiley informed dairy farmers at a meeting that two members of the staff devoted much time to the study of this taint and discovered that it arose from the contact of milk with copper. It had been thought to be due to bacteriological infection of some kind. Contact with a' copper wire gauze that held the filter cup, might produce that sort of oily milk which was absolutely undrinkable and unusable. The curious thing was that this effect was only produced at low temperatiire. Oily milk had given a tremendous amount of trouble, especially in winter.
