BUTTER, BACON, AND EGGS

NORTH IRELAND PRODUCTION.

The production of eggs is a very important branch of Ulster agriculture. There iwere nearly 7,000,000 head of poultry in the country last year, and tihey supplied the British market with many millions of eggs. The Marketing of Eggs Act—the first measure of its kind in Great Britain —has led to an improved standard of marketing and packing of eggs for transit, and the Ministry of Agriculture is continuing active propaganda in the country districts to. improve marketing conditions. Dairy herds also are heing improved; a greater yield of milk obtained; consequently an increased supply of butter will he available for the British market. Surprise butter inspections are held in various centres in England and Scotland, and last year these included Glasgow, Liverpool, Manchester, and New-cas'tle-on-Tyne. A special Government stamp has been instituted which only those creameries which have been successful in obtaining premium or standard awards for their butter inspections are entitled to use. The official stamp affords a guarantee that the hutter has been made by a high-class Ulster creamery. The Ulster baconcuring industry is one of very large dimensions, and last year, according to the Ministry of Agriculture's official figures, the number of pigs cured in Ulster factories was 300,000, and 275.000 cwt of bacon and hams were exported to Great Britain.
