ICE CREAM
POPULAR IN GREAT BRITAIN. Nearly two thousand million portions of ice cream are served annually, in the United Kingdom in more than sixty 'thousand shops, stalls, and kiosks, by nearly two hundred thousand merchants and assistants. As there are between sixty and seventy portions to the gallon, tihs means that in wafers, plain ices, drinks, and sundaes there are consumed annually about six million gallons of fresh milk, thirty thousand gallons of cream, fifteen thousand gallons of crushed fruits, twenty thousand tons of sugar, and thirty tons of flavouring essences—not to mention whippings and toppings to the extent of some fifteen hundred gallons.
