During the month of February the Eltham Co-operative Dairy Company received 179,3701bs of butterfat, manufacturing 5663 cwt. of cheese. The average test was 3.82. The company pays out, at the rate of Is per lb of buttertat, the sum of £8968. This is an increase of £233 compared with the corresponding period of last y/ear, when the company paid out, at the same rate, viz., the sum of £8715. The Meat Trust in Australia is adopting the methods that make money. It has secured the services of two of the smartest men connected with one of the biggest meat concerns in Queensland. One is reported to be receiving £3OOO per annum, as against £IOOO which his Australian employers paid him, and the other £ISOO in place of some £7OO or £BOO. The Bulletin argues that "this country doesn't yet generally understand the value of big pay, but the Yankee will teach the lesson. Unfortunately it will be at the expense later on of Australian stock-owners and stock consumers, unless the Trust is going to belie all previous history."
