PASTEURISING SKIM-MILK.

The following question to the Hon. Mr Massey, Minister of Agriculture, from Mr J. A. Young, member for Waikato, apptars on the Order paper of Wednesday, 27th day of August, 1913 :

Whether his attention has been drawn to the address delivered by Mr C. J. Reakes, Government Chief Veterinarian, before the •Waikato Farmers’ Club at Cambridge on the 20th June last, on the subject of tuberculosis in pigs and calves, when he said, “He was glad to say that at 175 factories the skim-milk was now being pasteurised, but it should be done at all of them. . . He believed if some more effective steps were not taken, tuberculosis would increase both in pigs and calves. . . Nothing would do so much good as the pasteurising of skim-milk at the factories. . .

When pasteurising was universally adopted the sellers would soon find the buyers running after them ”; and whether, in view of such definite and authoritative statements, he will promote legislation which will have for its object the compulsory pasteurising of all skim-milk and whey by the factories before returning it to the dairy-farmers ? In his reply the Minister stated the Government has for some time past been advising the proprietors of butter-factories to pasteurize all skim-milk before returning it to the suppliers, but does not consider the present time opportune for making this reform compulsory. The necessary plant is somewhat expensive, in many cases additional boilerpower would be required; and in a short time such plant and boilerpower might be put out of use by the conversion of butter-factories into cheese-factories or by the

rapid expansion of home-separa-tion of The number of butter-factories that pasteurized their skim-milk last season was only twelve. The matter of heating whey before returning it to the suppliers of cheese-factories is less difficult, and the work was undertaken last season at 163 factories. The whole subject is being carefully watched by the Government.
