SOFT CHEESE INDUSTRY.

TESTING THE HOME MARKET. With a view to testing the Home market and also to ascertain how fancy cheese will carry from New Zealand, several small consignments of Cheshire and Caerphilly cheese are to be despatched by the Agricultural Department at an early date. The cheese will be carefully packed and consigned to England. Given satisfactory results in these trials some of the dairy factories which are taking up the manufacture of fancy cheese for the local market may be tempted to ship regular supplies to England, when the market is favourable.
