On the despatch of any butter or cheese to the cool store, advice thereof must be immediately posted, addressed to the Government grader at the store, giving full particulars of the number of kegs, boxes, or packages. The ports of shipment are to be Auckland, Wellington, Lytlelton, and Port Chain:ers, and such others as may from time to time be proclaimed. The contents of every keg, box, or package containing butter or cheese shall be graded while in the cool store, and shall be stamped with the official stamp or mark. For the purpose of testing the quality of any butter or cbeese, the grader may open and sample any of the packages. Pure milk—tbat is, the whole of the milk of cows, including strippings—must be supplied to a factory or a creamery, or to the public, unless otherwise stated. Every person supplying milk to a dairy, factory, or creamery shall, immediately the milk is drawn from the cow, have it cooled or serated. Milled butter, which in the interpretation clause is defined as pure butter collecl ed from one or more dair es or factories for the purpose of being m : xed or blended and packed, must he stamped with the words ‘New Zealand milled butter,” before it leaves the factory, and all butter and cheese shall he marked with the words ' New Zealand dai -y,” “New Zealand factory,” or “New Zealand creamery.” The stencil-plate or rubber stamp shall be obtained from the Department of Ag •'culture. There is a clarse as follows relating to the rate of payment for m'lk ■ — Every owner of a dairy, factory, or creame.y receiving milk shall pay for the sane at per ga’lon of eleven pounds avoirdupois; but nothing herein contained shall prevent any dairy, factory, or cre-mery owner paying for such milk according to the productive character thereof.
