DAIRYING

DOMINION'S PRODUCTION. INCREASE FOR SEVEN MONTHS. Compared with production in the corresponding period of the previous season there has been an increase of 4.15 per cent in the Dominion output of butterfat, for the first seven months of the present dairying season. The figures of the dairy division of the Department of Agriculture show that the salted butter graded for February, .1931, was 10,460 tons, and the unsalted 388 tons, a total of 10,848 tons, compared with 11,050 tons salted and 180 tons unsalted, a total of 11,230 tons, for February, 1930, a decrease of 3.40 per cent. For the seven months ended February the respective quantities were 71,996 tons and 2710 tons, a total of 74,706 tons, compared with 72,369 tons and 1185 tons, a total of 73,555 tons, for tho corresponding period of the preceding season, an increase of 1.56 per cent. The cheese graded for February, 1931, comprised: White, 7554 tons; coloured, 3348 tons, a total of 10,902 tons, compared with 7365 tons white and 3248 tons coloured, a total of 10,613 tons for February, 1930, an increase of 2.72 per cent. The quantities for_ the seven months, ended February, 1931, were: White, 46,273 tons; coloured, 20.998 tons; a total of 67,271 tons, compared with 40,101 tons white and 21,104 tons coloured, a total of 61,205 tons, for the corresponding period of the preceding season, an increase of 9 91 per cent. Converting these figures into butterfat equivalent, there is an increase of 4.15 per cent in butterfat; production for the seven months, as compared with the corresponding period of the preceding season. Stocks held in the various grading ports as at February 28 were: Butter, 16,038 tons; cheese, 14,103; as compared with 12,834 tons butter and 12,731 tons cheese held on February 28, 1930.
